MEET THE CREATIVE BEHIND CAKE-OLOGY
OUR PHILOSOPHY
I’ve travelled the world in search of inspiration through the wonderful world of food. What excites me is not knowing what I already know. Bringing new flavours and ideas to people I meet back home in Winnipeg is so rewarding on its own. This bakery means absolutely everything to me. A reflection of what stood out in terms of textures, flavour profile, aromas, colours and contrasts, and most importantly, culture.
First, it’s a solid foundation. Tempering chocolate, fundamentals on baking, lamination doughs, the science behind the different methods on cakes, cookies, custards, mousses, and so on. Behind it comes the creativity. How to make a classic dessert your own through ones personal style and interest.
Finally, the last thing is balance. A balance of sweet and salty is a good example and one of my favourite things to pair. Another could be a soft and crunchy. Things we must consider as being chefs.
